Ever have that sweet tooth attack late at night, but don't want to commit to an entire piece of cake or pint of ice cream? (Though some nights call for that kind of commitment). Even well-before the sugar cravings of pregnancy hit, this mug cake has saved me from a few nighttime sweet tooth attacks.… Continue reading 90 second mug cake

The sweetest thing I ever baked. 10/18/18. 💗
{fettuccine with fresh corn & herbs} A deceivingly creamy pasta dish without a touch of heavy cream!🍝 As summer comes to a close here in Texas, I was looking for a warm bowl of pasta that featured some of those final summery flavors of sweet corn and bright, garden-fresh herbs. I stumbled upon this NYT recipe and adapted it to our pantry and our tastes. It’s now become a favorite, easy week night dinner recipe of ours and I can’t wait to share it with you. I personally think it tastes best with fresh, delicate egg pasta like fettuccine or linguine, but you could certainly use dry pasta if that’s what you have on-hand. Cheers to this lovely cooler weather and see you & your fresh, sweet corn next year, summer. 🌽 Recipe at lettherebebutter.com.
{vietnamese coffee ice cream} Ever tried Vietnamese coffee? It’s stronger and darker than traditional American coffee, but often served counterbalanced with sweet, sugary condensed milk for one decadent caffeine fix. ☕️ Now take that deliciousness and let’s freeze it for the boldest, yet sweetest coffee ice cream. That’s exactly what we did for a recent supper club gathering where the menu theme was Vietnamese. While you will need some coffee filters or a very thin mesh sieve here, there’s no tempering of eggs or anything fancy. A simple recipe with incredible results. 👌🏻 Pro tip: it is especially decadent when paired with a homemade caramel sauce drizzle. Just throwing it out there, friends. 🍨 Recipe at lettherebebutter.com
{iced ginger & pear bread} Fall is coming. I can feel it! 🍂🍃The pumpkin spice lattes are officially available and the high this weekend is 75 degrees. The HIGH. This 8 month pregnant lady is so thankful that the 100+ degree plus days are a thing of the past. With fall comes the need for warm, sweet desserts that pair well with a hot mug of fresh coffee or steamy cider. This iced ginger & pear bread will certainly do the trick. Great for breakfast, dessert or just an afternoon snack, this bread resembles a sweet spice cake and makes great use of any overripe pears that you may have on hand. Ready for you, fall! 🍐Recipe at lettherebebutter.com
