rosemary dijon baked chicken thighs

dijon chicken

You’ve probably seen this recipe all over Pinterest called something like “Holy Yum Chicken” or “World’s Best Chicken.” Well the verdict is in and I’m here to say…it’s as good as the pinners claim. Holy yum.

We use chicken thighs a lot around here since you can get them organic for a lot cheaper than organic chicken breasts. And even if you don’t like mustard, I’d still encourage you to try this recipe since the maple syrup and rosemary really transform it into an amazing sauce. Easy weeknight dinner comin’ right up.

  • 1 lb. organic boneless, skinless chicken thighs
  • 1/4 cup Dijon mustard
  • 2 Tbsp. real, 100% pure maple syrup
  • 1 Tbsp. extra virgin olive oil
  • 2 tsp. soy sauce
  • 1 large clove of garlic, minced
  • 1 Tbsp. rosemary, minced
  • sea salt & freshly ground pepper

  1.  Preheat the oven to 375 degrees F. In a small baking dish, whisk together the Dijon, maple syrup, oil, soy sauce, minced garlic, and minced rosemary.
  2. Lightly salt (because of the soy sauce) and pepper each side of the chicken thighs and add to the sauce in the baking dish. Stir the chicken around to coat all sides.
  3. Bake for 45 minutes and remove chicken from the sauce with a slotted spoon to a plate. Serve with your favorite side dishes.
